2 Salad Recipes that are to die for!

Yummy Salads for the Summer!
Salad #1

Spinach-Strawberry Salad

8 cups spinach
1/3 c. pine nuts (I use sliced almonds)
1 chopped avocado
1 basket sliced strawberries
1/2 c. Feta Cheese (I use mozzarella)

Dressing:
1/2 c. sugar
1 1/2 t. red onion
1/2 t. salt
1/2 T. paprika
1/2 T. Worchester Sauce
1/4 c. apple cider vinegar
1/2 c. olive oil
Blend all that in the blender... and mix in with the salad... then enjoy!!

Salad #2:

Tropical Green Salad with Apricot Vinaigrette

2 ripe, firm pears, cored and sliced
Lemon Juice
8 C. bite-size pieces leafy greens
5 ripe kiwis, peeled, and sliced
1 can Mandarin oranges, well drained (I use 2)
1/4 C. chopped honey roasted almonds (I use the sliced almonds accents)

Soak pears briefly in lemon juice to prevent browning. In a large salad bowl, combine and lightly toss the greens, kiwis, pears, oranges, and almonds.

Dressing:
1/4 c. white wine vinegar
3/4 c. apricot all fruit jam
1/2 c. canola oil
sugar
In blender, blend the vinegar and jam on low. With motor running, slowly add oil. Add some sugar if it is too tart for your taste. (A definate) Pour into serving container and let individuals add dressing to their salad.

This one is my fav! But both are delectable!!! Enjoy!

Of course you live in Utah and of course you do hair, you were always the cutest. Why don't you live here, my hair needs a serious overhaul. I'm so glad you found my blog, keep me posted on what you are up to. My husband and I did a temple session on our second date, I was such a cougar.
