Belated Post #2... 28th B-Day Celebration at Cancun Cafe

Somms and Kate took me to a wonderful lunch for my birthday at my new favorite Mexican food in good ole' Ut, since there aren't that many... It was so fun, especially to see my favorite little girls face when they brought out the fried ice cream sunday... with a cherry on top!

Talked to Joel for Mother's Day


Yesterday being Mothers Day we had the chance to talk to Joel, Josh's brother, on the phone! He is serving a mission in Paraguay, so it was wonderful being able to talk to him! He is serving so fervently and we are so excited for him and all the lives he is blessing! Hopefully we will be able to make a trip when he comes home to visit the country! We love you Joel!

2 Salad Recipes that are to die for!

Yummy Salads for the Summer!
Salad #1

Spinach-Strawberry Salad

8 cups spinach
1/3 c. pine nuts (I use sliced almonds)
1 chopped avocado
1 basket sliced strawberries
1/2 c. Feta Cheese (I use mozzarella)

Dressing:
1/2 c. sugar
1 1/2 t. red onion
1/2 t. salt
1/2 T. paprika
1/2 T. Worchester Sauce
1/4 c. apple cider vinegar
1/2 c. olive oil
Blend all that in the blender... and mix in with the salad... then enjoy!!

Salad #2:

Tropical Green Salad with Apricot Vinaigrette

2 ripe, firm pears, cored and sliced
Lemon Juice
8 C. bite-size pieces leafy greens
5 ripe kiwis, peeled, and sliced
1 can Mandarin oranges, well drained (I use 2)
1/4 C. chopped honey roasted almonds (I use the sliced almonds accents)

Soak pears briefly in lemon juice to prevent browning. In a large salad bowl, combine and lightly toss the greens, kiwis, pears, oranges, and almonds.

Dressing:
1/4 c. white wine vinegar
3/4 c. apricot all fruit jam
1/2 c. canola oil
sugar
In blender, blend the vinegar and jam on low. With motor running, slowly add oil. Add some sugar if it is too tart for your taste. (A definate) Pour into serving container and let individuals add dressing to their salad.

This one is my fav! But both are delectable!!! Enjoy!

A Day in the Mountains...

My brothers came up this last weekend and we decided to take them up to the mountains for a fun day of fishing, shootin guns and Josh's very expensive Bow, and for a campfire with our new purchase of a grilled cheese cast iron maker! Even though the peach cobbler didn't work out to well, we had a good time! The weather was wonderful and Josh caught a little fish!




My 28th Birthday!

For My 28th B-Day on the 25th of April, Josh bought me a ruby ring, got me a 90 min massage and took me to a delectable dinner to the Market Street Grill.. It was such a fabulous birthday! Thank you babe I love you!!!!!

Shower for baby Lilly...


Two of my most wonderful friends, Sommer and Jackie, threw me this awesome shower! The games... the food... the company... it was all so fun!

Here are four good lookin boys gettin ready for the Priesthood session down in AZ! This traditional event is followed by dinner at Fudrucker's every year where Nate eats a whole lb. hamburger! Thankfully, there are no pictures of that!
